After months of negotiation CaribDirect Multi-Media has finalised a deal that will allow for a Caribbean Trade pavilion hosting 30 Caribbean trade stands at the London ExCel based Food Matters Live international trade show in 2018.

Ahead of this Caribbean Trade Pavilion next November 2018 was a Caribbean cooking demonstration which focused on Trinidad and Tobago cuisine at the 2017 Food Matters Live international trade show.

Celebrity chef from Trinidad and Tobago, Sabrina Zeif, representing Jus’ Caribbean (CaribDirect’s food and drink brand)  put on a captivating performance to an essentially non-Caribbean audience of foodies last Wednesday 22nd November. Amidst the usually packed venue of close to 5,000 visitors Sabrina had the full attention of close to two hundred viewers many of whom were curious passers by who couldn’t resist the aroma of authentic Caribbean cuisine.

Her dish that day was the Slate platter, a succulent delicacy of Pan Seared Caribbean Herb Chicken served on a bed of Rainbow Slaw with accompanying Okra salad, Avocado Chow and Aubergine Choka. This incredible masterpiece comprised three elements: 1. Pan Seared Chicken Breasts smothered in Caribbean Herb Rub & Cajun Seasoning and drizzled with Garlic and Roasted Scotch Bonnet Olive Oil. 2. Avocado, Orange & Pomegranate Chow:  Cubed avocado, orange segments and succulent pomegranate seeds marinated with Caribbean Herb Rub, black pepper, slivers of chilli pepper and dash of lemon juice; 3. Rainbow Slaw: shredded savoy and red cabbage, julienned red and orange bell peppers, grated mango, brunoise red onions, spring onion slivers with olive oil and lime and black pepper lavender vinegar; 4. Warm Okra Salad: Baby okra cut on diagonal pan fried in drizzle of avocado oil with cherry tomatoes, diced red onions, ginger, garlic and Caribbean herb rub. Okra is rich in minerals and vitamins; 5. Roasted Aubergine and Tomato Choka: Whole roasted aubergines folded into juicy ripe roasted tomatoes.

Sabrina finished off the presentation in a hot pan, drizzled with avocado oil and seasoned with salt, pepper, diced red onions and chilli peppers. She then served the dish in cherry tomato cups. Ideal with  pita bread, roti, rice or served as a dip. Garnished with micro coriander.

Needless to say her audience could resist the salivation no more and rushed to the counter almost in unison for the highly coveted tastings available. The comments of terrific, fabulous, incredible, delicious, spot on and others rang through to prove Sabrina had hit the mark and was truly a credible and fitting culinary representative of the twin island republic of Trinidad and Tobago.

No doubt this performance has set the stage for three days of Caribbean food demonstrations at the Food Matters Live trade show next November 20th, 21st and 22nd when three Caribbean countries will be represented.
