Sweet Caribbean Food

There are some things that are just part of us and say so much about us. Do you love Caribbean food? Or just love the taste of coconut milk (lait coco –- hope I’m right. This is supposed to be the patois/creole of coconut milk) or curry in your food?  Or what about a dash of pepper?

Here is one of my favourite coconut/curry recipes which I found in a Caribbean Cookbook:

3  lbs pork stew                                  3  cloves garlic, crushed

1  onion                                             1  tablespoon salt

2  ozs curry powder                             1  tablespoon vinegar

1  tablespoon massala                         1  coconut, grated

½ teaspoon cumin (ground)                  ¼ cup oil

Method: Season pork in a bowl using 2 cloves garlic crushed, salt and

vinegar. Allow to stand for about 2 hours. In the meantime, grate coconut and pour 1 cup boiling water over it in a bowl. Allow to stand for 3 minutes and using clean towel squeeze coconut to extract milk. Discard coconut and save milk. Then in a skillet, heat oil and garlic, allowing to get dark brown. Add curry, massala, cumin and chopped onion. Sautee for 3 minutes and then add pork. Saute pork for another 5 minutes, stirring very often. Then add coconut milk and enough water to cover pork. Bring to a boil, then lower heat, cover pot and cook over medium heat until pork is tender. Then serve hot with steamed rice.

I am still looking for a written recipe for making Sancoche. I used to really look forward to going home to Dominica, to my father’s Sancoche – that is Saltfish with Christophenes (you might know them by another name) and coconut milk. I can prepare it, however a structured recipe would be great.
