Yes so I have been M.I.A for a while (oh the joys of motherhood..lol).  Yes I am a new mommy! And in my bit to return to my normal size 10 self I have been working out…YES …me….certified foodie… working out…and trying to eat a bit healthier.

So I tried this very delicious dish and thought I would share with you guys as my welcome back meal!

So as you know if you’ve been reading the other recipes, I love my spices…I don’t do bland (sorry my British folks). So let’s get cooking!  Oh these photos aren’t actually mine (yikes)…an unfortunate incident took my mobile phone with the pictures (RIP).

First I get some really scrumptious (if that’s a word) salmon and I cut them into strips.  As usual I add my seasonings as I would for fish.  Add salt, black pepper, fish seasoning, pimento and garlic.

Salmon is quite easy to cook so you will just need to put this in the oven for about 25 minutes (make it crunchy).  After 15 minutes in the oven, marinate with Barbecue sauce.

I make my sauce with a little bit of ketchup, ginger, sugar (or honey if you prefer) and HP barbeque smoky sauce (just a little). Leave in oven for the remaining 15 minutes, and there you have it!!..quick and easy.  Serve with salad, rice and peas, or whatever your preference of side.  It makes a tasty, delightful dish.  I’m out…baby duties call J
